Lac St. Jean 32K: Because it's cold and there's nothing like swimming into the harbor at Roberval to 5000+ cheering people.
Atlantic City 37K: The toughest race on the planet. The first marathon I finished
Tampa Bay 42K: The longest honest race in the U.S.
Honorable Mentions:
English Channel (don't let politics and other nonsense distract you. Go into it with a definitive plan and stick with it. Don't be swayed into breaking your routine.)
Key West 20K: Too hot
Lake Travis 20K: Well run. A very tactical course
Seal Beach 10 miler: Simple course with nice conditions.
