For dryland sports or work efforts, exhale on muscular exertion is the correct method. But for racing starts in swimming, I prefer to inhale during flight to get a big gulp of air before I hit the water.
Which is better, inhale or exahale when diving off the starting block?
I've noticed that in order to bend over and grab (track start here), I have to exhale some, so, when I launch, I inhale.
I don't know if that's a flexibility issue, or maybe just plain getting fat.

Doesn't this depend on how quick or delayed the starting signal is delivered? Do you hold your breath or breath normally while awaiting the gun? Do you wait for the gun to exhale and then inhale?
I think it may be an uncontrollable effect which is why most do not even remember..
I exhale while lowering into starting position after the "Take Your Mark" signal; hold my breath or, if necessary (for a long starter cadence), breathe shallow once or twice; then explode off the block at the gun and immediately take a huge long gulp (inhale) on my flight toward the water.
I'll practice an exhale-inhale approach (hold breath, exhale off block, then inhale in flight), but I don't think there's enough time for the huge gulp I'm taking.

I have the same problem and exhale on the way down, and inhale mid-start.
